By Chef Christian Puglisi
Sicilian born chef Christian Puglisi is the co-owner of four restaurants in Copenhagen -- Relae, Manfreds, Bæst and Mirabelle. Before opening his own restaurants, Puglisi was a sous chef at Noma and elBulli. Both Relæ and Manfreds have the Danish organic certification, making Relæ the only michelin-starred restaurant with an organic certification in the world.
Chef Christian Puglisi's Restaurants
"Relae, Manfreds, and Bæst & Mirabelle are really four places with different outputs, but with the same core values. Cut-to-the-bones food experiences based on organic raw material."
How is the food at Bæst influenced by your own background? "Bæst is my tribute to Italian traditional and artisanal foods. Not an Italian restaurant, but a restaurant based on those values combined with local ingredients and organic choices."

What to Eat in Copenhagen
Make sure to try: Smørrebrød, because it is extremely Danish.
Take home: liquorices, they seem to be very rare anywhere else.

I would give La Glace a try. It's old fashioned and overpriced, but it is really a cultural institution and it looks like it has for many many years. It can be fun to try.

Amass Restaurant
This is a great restaurant on the modern side. The classic restaurants are best for lunch since traditional Danish food acts out better in that way.
