Sicilian born chef Christian Puglisi is the co-owner of four restaurants in Copenhagen -- Relae, Manfreds, Bæst and Mirabelle. Before opening his own restaurants, Puglisi was a sous chef at Noma and elBulli. Both Relæ and Manfreds have the Danish organic certification, making Relæ the only michelin-starred restaurant with an organic certification in the world.

How is the food at Bæst influenced by your own background? "Bæst is my tribute to Italian traditional and artisanal foods. Not an Italian restaurant, but a restaurant based on those values combined with local ingredients and organic choices."
