There is so much more culture to Brooklyn then the hip gentrified areas. It is super inspiring. At almost every corner you can find an interesting spot. Go explore your neighborhood and you'll be surprised by what you find. I use to live in Sheepshead Bay and everywhere you go you find tons of interesting old school markets, restaurants, and bars -- surrounded by Greek, Russian & Chinese communities.

Tell us about the experience you're creating at Colonie: We are trying to create that neighborhood bistro vibe and still be a place where you feel like you can come in for a special occasion.

When you eat at my restaurant, I recommend you try: Slow Roasted Pork Chop with braised cabbage, house pancetta, and beer mustard because it totally warms the bones. It's an example of a dish that shows a lot of great refinement, but simplicity as well.
